The recipe came with the farm, written in pencil inside a feed ledger. Dense, dark and properly sticky, with stem ginger through it. Wrapped well, it keeps for a week and improves for three days.

From the farm
The ovens go on at five and the first loaves are out by nine. We bake with stoneground flour from Greystone Bakehouse and refuse to hurry a sourdough for anyone, including ourselves.
